Barbecue Meatloaf

Servings: Serves 6.

I’ve done a lot of meatloaf recipes. I guess I’m kinda into comfort food and they have been very popular.

I had a hankering for ribs. I ordered some as an appetizer at a restaurant and they just didn’t cut it. I could not get the craving out of my head, so I came up with the barbecued meatloaf recipe.  Hope you love it.

Ingredients: 

  • 1.5 pounds of ground sirloin
  • 1/3 cup of minced red onion (I mince red onion because it’s stronger in flavor)
  • ½ cup of bread crumbs. I use panko. (remember not to eat a crunch factor cracker or breadstick with this meal. It’s included in the meatloaf)
  • ½ tsp of ground pepper
  • 2 Tbl of Worcestershire
  • 1.5 tsp of ground mustard (or jar mustard will work)
  • 1.5 tsp of chili powder (I use smoked)
  • ¼ cup of barbecue sauce (Traditional Smoky Barbecue Sauce) or ¼ cup of tomato sauce can work but it will be less of a barbecue flavor when done
  • 2 eggs
  • 1/3 cup of Zola’s Traditional Smoky Barbecue Sauce

Directions:

Make the barbecue sauce first if you want to use it in the meatloaf. This barbecue sauce is so easy it’s basically a matter of putting the stuff in the pan and heating it so the flavors meld. You’ll have leftovers of the sauce so you can use it in something else or freeze portions in little containers and use them later.

Then proceed with making the meatloaf. Preheat oven to 375 degrees

Put all ingredients in a large bowl except the last 1/3 cup of sauce.

Mix it up. I use my hands and really get in there and mix it thoroughly. It will be sloppy but don’t worry. Just get the breadcrumbs well distributed.

Take out your 9 in X 5 in loaf pan. Plop the mixture in there and pat it to form a loaf. I press down a little more on the edges so it has a rim round it and is rounded on top.

Place in the oven and bake for 40 minutes. Then take it out of the oven and attempt to pour off the extra juices from around the meatloaf. Don’t be too picky about this. Just try to get the excess out.

Then take a spoon and spread the other 1/3 of the barbecue sauce on top. Put it back in the oven and bake for 10 minutes more.

Take it out and let it rest for a few minutes. Slice and serve. A lot of dieters cut this into portions and put the extras in the freezer for eating at other meals. If you have a family that likes barbecue don’t expect any leftovers.
