Chipotle Pork Tenderloin

Plan Z Phase: This is a Z2 (ZReduction) recipe. You’ll give your mouth a sweet and spicy kick with this southwestern-inspired dish.

Servings: serves 6, plus you’ll have some ends for leftovers. You can shred those and serve them over a salad as a follow-up lunch item.

Ingredients:

  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 3 tablespoons chipotle chili powder
  • 1 1/2 teaspoons grated sea salt
  • 3 tsp Truvia
  • 2 (3/4 pound) pork tenderloins

Instructions:

Preheat oven to 400 degrees.

Combine the onion powder, garlic powder, chipotle chili powder, salt, and Truvia. Rub over all sides of the meat, coating meat evenly. Refrigerate for 10 to 15 minutes.

Roast in 400 degree oven for 20 minutes, or until your meat thermometer registers 160 degrees. Let stand for 5 to 10 minutes before slicing.
