Kickin Chicken Meatloaf

Plan Z Phase: This is a Z3 (ZReboot) recipe. Get ready to ‘kick’ up your dinner with this recipe from Dieter Rebecca. She used a combination of ground chicken and Italian sausage for an extra boost of flavor. She said it was kind of a fluke because she had to cook up the ground chicken in her fridge. Turns out though, she created a unique and delicious version of this American classic.

Servings: Serves 4-6. Cut in 1″ slices. One serving is one slice.

Ingredients:

  • 1 pound of ground chicken
  • 1 pound of Italian sausage
  • 1/2 cup of diced onion
  • 1 egg
  • 1/4 cup ground Melba toast (I used sea salt flavor)
  • 1 tsp mustard
  • 1 tsp black pepper
  • 2 Tbsp Worcestershire sauce
  • 1 tsp oregano
  • grated sea salt, to taste
  • olive oil spray

Instructions:

Preheat oven to 350 degrees.

Put your ground chicken and Italian sausage in a big bowl. Add the onion, egg, ground Melba toast, black pepper, Worcestershire sauce, oregano, and salt.

Now, it’s time to roll up your sleeves! Get your hands in there and mix everything until nicely combined.

Grease a loaf pan with olive oil spray.  Transfer your meatloaf mixture to the pan. Spread everything out evenly. You can shape your meatloaf in different ways. I like to make mine higher in the middle than at the ends. But, it is your choice.

Bake in the oven at 350 degrees for 1 hour. After 1 hour take your meatloaf out of the oven. There will probably be a lot of oil in the pan, so be careful. Let the loaf cool for 10 minutes before slicing. You should be able to get around six 1″ slices from the loaf.

You can serve a slice of the meatloaf with 1 cup of French cut green beans lightly sauteed in garlic and butter on the side. This will be your veggie portion.
