Southern Peach “Pie”

Plan Z Phase: This is a Z2 (ZReduction) recipe. I call this “pie” because it tastes like the middle of a peach pie; just no crust. I call it Southern because the Southerners are known for putting cinnamon and nutmeg in their peach pie recipes.

Servings: 1 serving is ½ cup

Ingredients:

  • 16oz bag of frozen piece segments or 3 cups of fresh peach wedges
  • ¼ cup of water
  • 2-1/2 tsp of cornstarch
  • 1 Tbl lemon juice
  • 1/3 tsp of cinnamon
  • 1/3 tsp of nutmeg
  • 1-1/2 tsp of organic vanilla

Instructions:

Preheat oven to 350 degrees.

If using frozen peaches try to let them sit on the counter for 15 minutes or so before assembling. It would be good to have them semi-thawed.

Put the peaches in a bowl. Stir the cornstarch into the water until it dissolves. Then pour that over the peaches. Add the rest of the ingredients and stir to distribute the spices and vanilla.

Pour into an ovenproof pan and cover with aluminum foil. Bake at 350 for 45 minutes.

If your peaches have a lot of ice on them this mixture might be a bit runny compared to a regular pie but it’s still great. I’d rather not add more cornstarch because corn starch contains 7 grams of carbohydrate per teaspoon.

Serve hot, cold or room temperature.

Leftovers transport easily and can be reheated in a microwave.
