Turkey or Chicken Meatloaf

Plan Z Phase: This is a Z2 (ZReduction) recipe.
For a change of pace you can try a unique meatloaf. This one comes with an optional extra sauce in case you want to really ramp up the flavor.
The meatloaf itself was flavorful enough for me. My husband loved the spicy sauce.
You can use ground chicken breast or ground turkey breast. Most stores do not sell ground BREAST ONLY. You will have to ask the butcher to grind some for you. Whole Foods is the only store I know of that has ground chicken breast every day. Most ground chicken includes dark meat so be careful not to get that or you’ll be in “caution” because you might get too much fat and end up stalling.
Servings: Serves 4-6
Ingredients:
For the meatloaf
- 1-½ lb of ground chicken breast or turkey breast
- ¾ cup of breadcrumbs (this is half of your crunch portion so keep that in mind)
- 1 egg
- 1 small onion, diced (or you can use shallots) ½ cup total
- 1/3 cup of tomato sauce (Canned is fine. Use the rest for something else)
- 1 tsp of garlic powder
- 3 tsp of Worcestershire
- 1 tsp of celery salt
- ½ tsp of grated pepper
For the optional sauce
- 1 cup of pico de gallo
- 3 Tbl of adobo sauce (from a can of chipotle peppers in adobo sauce. Use the rest for something else. These are quite spicy).
Instructions:
Preheat oven to 350.
For the meatloaf:
Spray a loaf pan with olive oil. Mix all of the ingredients for the meatloaf in a bowl. Get in there with your hands and really mix it up. Be sure the crumbs and the egg are well incorporated. Chicken breast is gooey, for sure.
Turn the mound into the pan and form the loaf shape.
Bake at 350 degrees for 1-½ hours.
Depending on how hungry you are, one slice might be enough to satisfy you. 1” thick. My husband had two. Just don’t go over 8 ounces.
For the sauce:
Mix the ingredients together and top your meatloaf slice with it. This sauce is served cold; sort of like a salsa on top of your meatloaf portion. Whatever amount you choose to take should be subtracted from your veggie portion.
