Waldorf Salad

This is a Z3 (ZReboot) and Happy Healthy Holidays recipe.
This will make a great side dish at your table; even your holiday table. And think of this as a way to use up leftover turkey. Make the salad. Add cut up leftover turkey and serve it over a bed of lettuce as an entrée offering. BIG YUM!
This version of Waldorf salad is fairly low carb. I accomplished this by changing up the normal proportions. You’ll notice it does have grapes and raisins, but fewer of them. Still gets the same raves. I like mine seasoned with sea salt and pepper, too.
Servings: Serves 10-12 as a side
Ingredients:
- 2 cups of cored, chopped apple. (2 large) (I used Granny Smith and Pink Lady. I also like to use Honeycrisp anytime I can get them. You can use your favorite apples). Don’t bother peeling your apples. This will give you more fiber and make for a more colorful salad. Be sure to wash your apples.
- 1/2 cup of mayonnaise
- 2 tsp of lemon juice
- 2 cups of diced celery
- About 10 grapes washed and quartered. This way it seems like you are using more than you are.
- 1 cup of chopped walnuts. You can get walnuts already chopped but I like mine in bigger chunks so I use whole and chop them myself.
- 1/4 cup of raisins
- 2 cups of chopped lettuce. You can use iceberg for crunch but it has no nutritional value. I went up a level and used butter lettuce.
Instructions:
In a bowl, mix your mayo and lemon juice. Then add the rest. Stir. This can be stored in the refrigerator before serving. Best served within 4 hours. Leftovers will still be good for a few days but might be a bit soggier.
