This is a decadent sauce that is very versatile. You can serve this over baked chicken, make “fettuccini” alfredo with zucchini noodles or when your weight is stabilized, you can indulge in a little pasta. Just remember that one cup COOKED is a serving of pasta. No more.
Ingredients:
- ½ cup of butter
- 5 cups of heavy cream
- Sea salt and pepper to taste
- 1 tsp of garlic powder
- 1/2 cup of grated Parmesan cheese
- ¾ cup of grated Romano cheese
Optional add-ons:
- 6 pieces of bacon cooked crisp and then chopped
- ½ cup of frozen peas (for 4 people this is a reasonable amount of peas; even if they are higher carb)
Instructions:
I am going to give you the instructions for how to make the sauce plain. If you want, you can add the other optional items when the sauce is ready. You only need a few minutes more to cook the peas and heat the bacon bits.
In a saute pan add the butter. As it begins to melt on medium, add the cream. When the butter is melted and incorporated, add the sea salt, pepper and garlic powder. Stir in both kinds of cheese. Continue to cook the mixture, stirring often on medium. You want a little bit of bubble. The cream and the cheese will thicken the sauce.
Turn off when the sauce is thickened and serve immediately. Pour it over your chicken, pour it over the zucchini zoodles or stir it into the pasta.
