Rhubarb Bumbleberry Dessert

In spring I always get a hankering for rhubarb. My mother used to plant it and I loved picking it in the warm sun. Usually I’d make a rhubarb strawberry crisp but on ZReduction that’s out of the cards. So I had an idea to mix the rhubarb idea with the Canadian idea of a bumbleberry pie.

Raspberry Coulis

Raspberry coulis is often used by dessert chefs to decorate your dessert at a restaurant. They put a swirl of it on your plate or maybe drizzle it over the top of the dessert. You can be fancy or plain as you wish.
