Creamy Dreamy Lemon Bars

My husband’s favorite dessert flavor is lemon. These hit his tart meter for sure! They taste divine and have no sugar and no gluten. Your friends and family won’t need to know these aren’t “bad” for you!

Lemon Brownies

I found a classic Southern Living recipe and took out all the sugar. These are amazing – even if I do say so myself!

Pumpkin Spiced Pecans

These sweet and spicy nuts are perfect for snacking, make a great salad topper or adding a special something to your favorite desserts.

Patriotic Cherries

To make this dish “patriotic’ all you need to do is add blueberries and you have a red and blue dessert. You don’t need to feel left out of the holiday celebration just because you’re on a diet. Yours will be just as colorful and tasty as anything else being served.

Chocolate Liqueur Pots de Crème

When I made it the other night one dinner guest declared it “Birthday Cake Good.” Which means...who needs birthday cake when you can eat this kind of Big YUM stuff!

Cranberry Royale (EASY)

This is a takeoff of a cranberry bake recipe from Southern Living. This is homey, tasty, and not too sweet. Just a little cranberry twang but plenty of sweetness in the apples.

Healthy Orange Creamsicle

We have to thank Dieter Claire for inventing this recipe. She modified the fruit parfait recipe and developed a strawberry "ice cream" recipe and this recipe with frozen mandarin oranges. She says, “it’s like an orange creamsicle.” YUM!

Strawberry “Almost Ice Cream”

Dieter Claire invented this recipe by modifying the fruit parfait recipe and adding extra frozen strawberries. She says, "it's as close to ice cream as you can get." We agree.

Caramelized Pears (ZReboot Version)

A no sugar variation of my caramelized pears recipe. Still very yummy!

Caramelized Pears (ZReboot 3.5 Version)

Chris’s cousins sent us a HUGE box of fruit as his get well wish. There are only two of us, so in order to use the fruit I have had to get creative! Oh, my, these are yummy!

Lemon Bars

I found a recipe online for keto lemon bars. I "Zolafied them" and made them for a party. Wow.

Lemon Curd

Lemon curd is the perfect spring and summer dessert ingredient. You can serve this very simply by dipping cookies in it or use it like icing dividing layers of a cake. I like to make a tart or even mini-tarts.

No Bake Shortbread Cookie Crust

I am a huge fan of English shortbread. When I traveled a lot in England on business, the hotel usually left a package or two by the coffee maker. I used to make that my little breakfast while I worked at the desk.

Blueberry Sauce

A delicious sauce to pair with your favorite dessert.

Cognac Truffles

If you don’t use liquor in your cooking you can leave that out. You can also flavor them with stevia flavorings. You could have coconut, vanilla or other flavors.

Pumpkin or Sweet Potato Bread

Everyone loves pumpkin, right? Well, how about a tea bread that’s made with pumpkin? Sort of like banana bread. Or even make it with sweet potato puree.

Peach Blueberry Slab Pie

One piece of advice on this recipe, eat it fast. That means invite some folks over and try to polish this off in one seating.

Low Carb Berry Coffee Cake

For breakfast in the morning or with a cup of tea in the afternoon, this low carb coffee cake hits the spot. I made mine with blueberries fresh from the garden, but most berries will work.

Banana Peanut Butter Bars

The best news is Bob’s Mill has come out with a “superfine” grind almond flour. It makes baked goods so tasty you’d hardly tell the difference.

Low Carb Banana Bread

I eat very few bananas these days because as they ripen their carb count/glycemic index load goes up. So this is a treat. Don’t plan to eat the whole loaf yourself. That could get dangerous.
