Chicken Piccata

Servings: Serves 2
Ingredients:
- 2 boneless skinless chicken cutlets or thinly sliced chicken breasts
- 3/4 cup chicken broth
- 1-2 tsp garlic, minced
- 2 Tbsp fresh lemon juice
- 1 Tbsp capers drained
- parsley, chopped
- sea salt
- pepper
Instructions:
Season cutlets with sea salt and pepper. Spray a non-stick pan with cooking spray and saute cutlets, flipping once until cooked through. Remove the cutlets from the pan and cover them to keep them warm.
Deglaze pan (dilute the remaining fat) with the chicken broth. Add garlic and cook for 1 minute. Add lemon juice and capers. Add cooked chicken and any accumulated juices.
To serve, plate chicken and pour sauce over.
Garnish with parsley. Add lemon juice and serve.

When I was a kid this was served at very special meals. My mother made hers plain. I had no idea how incredibly fabulous this meat could taste until I started adding the meat rub!

Would it be ok to make this without capers?
Absolutely! And it would still be quite tasty.
Capers just taste a bit like pepper. So you could use a bit of large grind black pepper and almost duplicate it.
I made this tonight, which is first Reduction night and served it with the Garlic Roasted Cabbage Steaks. I also served my husband and son some sautéed zucchini and sliced cucumber with it. We all loved the Chicken Piccata and Cabbage. Delicious and so easy.
