To make this dish “patriotic’ all you need to do is add blueberries and you have a red and blue dessert. You don’t need to feel left out of the holiday celebration just because you’re on a diet. Yours will be just as colorful and tasty as anything else being served.

Healthy Orange Creamsicle

We have to thank Dieter Claire for inventing this recipe. She modified the fruit parfait recipe and developed a strawberry "ice cream" recipe and this recipe with frozen mandarin oranges. She says, “it’s like an orange creamsicle.” YUM!

Rhubarb Bumbleberry Dessert

In spring I always get a hankering for rhubarb. My mother used to plant it and I loved picking it in the warm sun. Usually I’d make a rhubarb strawberry crisp but on ZReduction that’s out of the cards. So I had an idea to mix the rhubarb idea with the Canadian idea of a bumbleberry pie.

Raspberry coulis is often used by dessert chefs to decorate your dessert at a restaurant. They put a swirl of it on your plate or maybe drizzle it over the top of the dessert. You can be fancy or plain as you wish.
