Spicy Mandarin Orange Chicken

Plan Z Phase: This is a Z2 (ZReduction) recipe. I had this for lunch today – was spicy and sweet and sort of made me forget I’m sitting in the middle of a snowstorm!
Servings: Serves 4
Ingredients:
- ½ tsp salt
- ½ tsp ground ginger
- ¼ tsp pepper
- ¼ tsp crushed red pepper flakes
- 4 (6-8 oz) chicken breast halves
- olive oil spray
- 2 cans mandarin oranges
- 1 small onion, chopped
- ½ of a red/yellow or orange pepper or mixed if you prefer, chopped
- 1 cup pea pods (optional)
- 3 Tbl fruit pectin (will help thicken the sauce)
Instructions:
In a small bowl, combine salt, ginger and black pepper. Sprinkle over both sides of the chicken. In a non-stick skilled sprayed with a little olive oil spray sauté chicken about 2 minutes on each side or until browned. Remove from pan and set aside.
Reduce heat to medium low. Drain oranges, reserving juice. Stir juice, onion, red pepper, peapods, fruit pectin and red pepper flakes into skillet. Cook and stir for about 3 mins or until onion is tender. Bring to a boil, return chicken to the pan. Reduce heat, cover and cook about 10 minutes or until chicken juices run clear and is thoroughly cooked. Add mandarin oranges, heat through and serve.

When I was a kid this was served at very special meals. My mother made hers plain. I had no idea how incredibly fabulous this meat could taste until I started adding the meat rub!

Is this meal supposed to be both your veggie and fruit portion?
Yes, there are enough veggies in it that it will consist of most of your veggie portion for one meal. But you can have a salad with a few veggies on it if you’d like (cucumber, onion, tomato, etc).
This tasted excellent. It’s definitely going into my save file to make again at some point.
I didn’t have pectin, or the peapods, but it still came out excellent.
My only “complaint” about the recipe is that it says 2 cans of Mandarin Oranges, but doesn’t say how big the can is supposed to be. I had individual mandarin orange packs for my lunch and since this serves four I used four of those.
