Italian Crockpot Chicken Soup

Plan Z Phase: This is a Z2 (ZReduction) recipe. Dieter Emily sent us this easy to make crock pot weeknight recipe. Emily says, “when I came home from work, it smelled heavenly! This soup has so much flavor and is also quite filling!”
Servings: 1 1/2 cup portions will serve 6. This will count as 1/2 your veggie meal portion. And don’t forget you can also have a salad on the side!
Ingredients:
- 3 or 4 large chicken breasts
- 1-2 cups organic chicken broth
- 1/2 cup cream
- 14 oz diced tomatoes
- 1 or 2 cloves chopped garlic (or 2-3 tsp jar garlic)
- 2 tablespoons Italian seasoning
- 1 tablespoon dried basil
- 1/2 onion chopped
- 3-4 stalks celery chopped
- fresh spinach (I used 3/4 of a bag)
Instructions:
Put everything except the cream and the spinach in a crockpot for 6-7 hours on low. With about 30 minutes left use 2 forks to shred the chicken. It is really easy since the breasts have been cooking all day. Then slowly add cream and stir. Add spinach and stir. Leave in the crockpot on low for 30 minutes.

I wish on all the recipes you out if this is our veggie serving in its entirety as well….
This is a really good suggestion, we’ll start including whether or not the veggie serving is included in the recipe.
Made this last night. My mom came over to eat… Complimented me the whole time on how good it was! My favorite so far! My daughter and fiance ate it up too! I added a lot more spinach.
