Broccoli Cheese Brunch Pie

Plan Z Phase: This is a Z3 (ZReboot) recipe.
Breakfast. Lunch. Brunch or even a light dinner. I’m calling it Brunch Pie. You can even serve this as a side dish at a family event. Even the kids who don’t like veggies will like this one. This will travel well for a pot luck item or you can take leftovers in Tupperware for your lunch.
Servings: Serves 4 as an entrée, 6 as a side dish
Ingredients:
- 2 cups of broccoli. Cut the florets into small, bite-sized pieces. You can even have some bits of the tender part of the stalk if you like. Throw away the tough parts or put into compost.
- ¼ cup of butter
- 4 ounces of sliced mushrooms chopped into bite-sized chunks
- 3 Tbl of gravy flour
- 1 cup of ½ n ½
- 3 eggs, beaten
- 2/3 cup of mayonnaise
- 3 Tbl of minced shallot
- Grated sea salt and black pepper to taste
- A whisper of nutmeg
- ½ cup of shredded cheddar cheese (This will make for a very cheesy pie. You can cut this in half if you’d like.)
Instructions:
Preheat oven to 350 degrees.
Steam the broccoli for 4 – 6 minutes until done. While that’s steaming you can saute your mushrooms in one tsp of the allotted butter. Cook until they just begin to brown. Set aside.
In a sauce pan add the rest of the butter and the flour. Melt butter and stir in the flour until you have a thick paste. Then begin to drizzle in the half n half while you are stirring with a whisk. You don’t want lumps so keep stirring while you slowly add the half n half. Cook the sauce on medium, stirring often until it thickens. Turn off heat.
In a large bowl, add the beaten eggs with the mushrooms, broccoli, shallots and the seasonings. Stir to combine.
In a high-sided pie plate (or a 9” x 9” ovenproof dish) spray in some olive oil. Then add the mixture from the bowl. Top that with the white sauce from the sauce pan. Mix it up a bit to get the sauce down in between some of the broccoli bits.
Bake at 350 for 30 minutes. Then remove the dish and top with the grated cheese. Put it back in the oven for another 10-15 minutes. Serve warm or room temperature.

Does this recipe really only need 1/2 cup of cheddar cheese? Does not sound very cheesy..Thanks
It doesn’t have a lot of cheese in it, but the texture is very creamy because of the cream, butter and mayo. I find 1/2 cup of cheese is enough. If you want a stronger cheese flavor you can always add more, or use a sharp cheddar so the flavor carries.
